SHEET PAN ROASTED SALMON AND VEGGIES DINNER

An Effortless, One-Pan Recipe, Perfect For The Busy Weeknights Dinners


Sheet pan dinners are the ultimate one-pan meals. These versatile meals are easy to customize for even the pickiest of eaters. With a trusty sheet pan, just a few pantry staples and your favourite in season vegetables in just about 30 minutes of cooking, you can have a hearty, tasty dinner on the table any night of the week.



This recipe is highly versatile, you change out the veggies depending on the season and your family’s preferences. Here we went with Brussels sprouts, sweet potatoes and cheery tomatoes, some of our personal favourites – but you can also use butternut squash, green beans, zucchini, peppers, onions or shallots, broccoli, cauliflower, potatoes, fennel, carrots, etc. Go with the your family's favourites and whatever produce is in season.



The simple herb blend brings a cajun flavour, but after you’ve made this recipe once, I hope you will feel inspired to get creative. Try a whole grain mustard or maybe try lime garlic chilli powder blended. Lemon garlic would be a nice flavour too. Also can add dill or capers for bit of freshness.


This meal is not only delicious but it’s unbelievably good for you. Rich in omega-3 acids EPA and DHA, vitamin B12 and selenium which are linked to improving heart health, brain function, cognition, and neurological health.


As usual, I am giving you guys the base recipe as a foundation but you guys got my blessing to go wild and have fun with whatever substitutions you would like to make. I hope that these types of recipes give you the space to feel inspired and creative and even more, I hope you feel empowered to be come your own kitchenfarmacist.

Ready, Set…It’s time to rock that sheet pan dinner

Gluten-free, grain-free, Paleo, Whole30, dairy-free, egg-free, nut-free, AIP and FODMAP options

Serves: 2 servings

SHEET PAN ROASTED SALMON AND VEGGIES DINNER

INGREDIENTS:

  • 2 pieces 4-5 oz portions of salmon cod or halibut

  • 2 tbsp of cajun seasoning, more if you like it super spicy

  • 3 cloves minced garlic

  • 1 tbsp kosher salt

  • 1/2 tbsp freshly ground black pepper

  • 3 tbsp olive oil

  • Lemon slices, to place on top of the salmon

  • the juice of half lemon

  • 1/2 cup of each: brussels sprouts, sweet potatoes and cheery tomatoes

  • olive oil

Other Veggies to Try:

cabbage, green beans, squash, peppers, onions or shallots, broccoli, cauliflower, potatoes (white), zucchini, carrots, etc.


Instructions:

  1. Preheat oven to 400ºF. Line that pan with some parchment paper to make clean up really easy. 

  2. In a small bowl, whisk together the cajun seasoning, lemon juice and teaspoon of olive oil. Season with sea salt and black pepper, to taste.

  3. Place the brussels sprout, cherry tomatoes and sweet potatoes in an even layer onto the prepared baking sheet. Drizzle with olive oil and season with salt and pepper, to taste.

  4. Top with salmon filet(s), spoon the cajun mixture on top (dividing evenly among the filets if more than one). Arrange the lemon slices on top.

  5. Place the pan into the preheated oven and cook until the fish flakes easily with a fork, about 18-20 minutes.

  6. Serve immediately, garnished with fresh dill, if desired.
